Here is a low glycemic treat that you can have in moderation. My client Richard made this last night and his family raved about it! Sugar Free Jell-O uses the artifical sweetener Aspartame so I do not recommend this on a daily basis.

Jell-O Low Glycemic Treat

Ingredients

2 Box’s Instant Sugar Free Jell-O Orange flavor
12-16 ounces of Cottage Cheese – Low Fat
1-2 Mandarin oranges

Directions

Prepare Jell-O according to the package directions
Let sit in refrigerator until solid

Whip the Jell-O with a hand blender or blender
Add in Cottage cheese ( Put in 12 ounces or more depending on your taste)
Add in Mandarin oranges

Toss all ingredients together and serve.

You can use any flavor of Jell-O and then add any of your favorite fruits.

This is a low gylcemic treat
